dc.description.abstract | Stability is one of the obstacles in the process of collagen production, the process of making preparations containing collagen, and the storage time of raw materials and preparations containing collagen, as there is a high demand for collagen in the pharmaceutical and cosmetic industry. Collagen is sensitive to temperature, above ±40°C the triple helical structure of collagen changes into linear chain decreasing its quality, changes in the arrangement of functional groups, absorption intensity, viscosity, changes in glass transition temperature, even changes in denaturation temperature. The purpose of this study was to determine to determine the effects of temperature variation and storage time on the physicochemical properties of Snakehead skin collagen. Collagen was stored and observed for 60 days at 80% RH in 5, 26, and 40°C as powders and dispersions. The glass transition temperature of collagen powder decreased. Characterization of the functional groups of collagen powder revealed a hypochromic change in the wave number of the amide A groups with increasing storage temperature. The intensity of UV absorption appears hyperchromic at a wavelength of ± 230 nm. Viscosity of collagen dispersion decreased with increasing temperature and storage time, and the denaturation temperature of collagen dispersion decreased to 28°C. During storage, the higher the temperature, the lower the physicochemical quality of collagen. It can be concluded that collagen powder is optimally stored at temperatures of 5, 26 and 40°C, while collagen dispersion is stored at temperatures of 5 and 26°C. | en_US |
