Abstract

Snacks have become an integral part of community life, both in urban and in rural areas. Snacks must qualified nutritional, sanitation, safety and health so that food produced snacks truly safe and healthy as consumers. The objective of thisresearchistoknowabouthygieneandsanitationsnacks. This kind of research is descriptive and research sites in the Sipirok Market Sipirok subdistrct South Tapanuli District. While the number of samples for snacks seller amounted to 5 seller (2 traders satay, 1 traders fried and 2 tradersmix). The result of this research showing the hygiene and sanitation principle of the seller in Sipirok Market were not comply health based ministry decree of Indonesia number 942/Menkes/SK/VII/2003 namely the storage of the raw material,preparation,transportandservenamely<65%. Based on this result, the official of healthy may hope do counseling about hygieneandsanitationsnackstothestreetvendorsinthemarketSipirok.
